The White Birch Brewing Apprentice Series is the culmination of months of hard work and fun. Matt McComish is our first brewer apprentice.

For Matt’s professional debut he choose to brew a Wit. Fruit notes and a hint of spice, with a satisfying balanced finish. Great for summer months in New England or just about anytime in Hawaii.

Aloha means hello and good bye in Hawaiian. So we say aloha to Matt as he moves on and hope you enjoy his beer as much as we do.

I started apprenticing at White Birch in the Fall of 2009. I met with Bill and we discussed what I wanted to take away from this experience and what we would do for the upcoming months. When he told me that I would be brewing my own beer I was ecstatic, and I instantly knew what I would brew. The Belgian Wit is the style that got me into craft beer, and its something I always wanted to create. I took the ample amount of knowledge that Bill taught me over the months and designed this beer. I’m very fortunate to have met and worked with Bill at White Birch, and cannot wait to see how far he can take his beers.

Food Pairings
Our beers pair great with rich, creamy or spicy cheeses and crackers as an appetizer. You can also compliment the cheese with your favorite dried meats or raw veggies. If you’re looking for a pairing for lunch or dinner, our beers go great with Mediterranean food, Thai, steak, or a crumbled blue cheese and bacon burger.
