With this release by Justin Umlah, our seventh brewer apprentice, we bring you his take on a Scottish Style Wee Heavy. Eorna Ceol, or barley music in Gaelic, is a rich, full bodied ale with a beautiful mahogany color.
As Justin moves on, we raise a toast and hope you enjoy this beer as much as we do.

Taking an apprenticeship at White Birch Brewing is all about expanding horizons and trying something new. Its about stepping out of your comfort zone and into the seven barrel brew kettle to scoop out a few pounds of hop paste. I jumped into the experience with a hunger for knowledge, a dancing imagination, and a fever for cleaning. Given time and the proper conditions I poured out knowledge based flexibility, a good plan, and plenty of intestinal fortitude.
Creating “Eorna Ceol”, I made multiple test batches. Some ended up as the solid base for some soon to be delicious “sour ales”. The others became the base of some friend and family gatherings. Admittedly, none of them turned out as planned, but if I learned anything from this apprenticeship it would be; if you apply your imagination to your flexibility everything goes as planned.
I love beer, music, and good stories, especially when they overlap. So I named this Scottish Wee Heavy “Eorna Ceol” Scottish Gaelic for “Barley Music”. Pair with good folk, light hearts, and refill often.
