With this release by Kate Wallace, our ninth brewer apprentice, we bring you a special Belgian inspired ale. Like the precious Jasmine of the orient, this rich red ale offers a nuanced spiciness with a smooth medium bodied malt backbone and a dry finish.
As Kate moves on, we raise a toast and hope you enjoy her beer as much as we do.

I was drawn to brewing not only because I love good beer but also because I have a passion for creation; for taking steps to produce something tangible that can be shared with other people. This passion led me to White Birch’s doorstep. I had recently come back from Belgium’s Lambic country and was really excited to see Bill’s collection of carboys filled with wild concoctions. When he offered me the apprenticeship, I accepted immediately.
I feel privileged to have been White Birch’s first female apprentice. Everyone at the brewery has been fantastic; Bill, Dave and Chris are great teachers and have given me a clear picture of what it means to be a successful commercial brewer. Ellen and Brian also played an important role by showing me unique and creative ways of presenting a product. The work at a brewery is not easy, but it is incredibly rewarding. Brew day for Jasmine was an epic 12 hours; it was grueling at times, but that process has led to a beer that I am proud to share with everyone.
As I move on from White Birch, I plan to continue to brew small batches and share them with friends and strangers alike. I hope you enjoy the results of my time and effort, which I truly feel is reflected in Jasmine.
