Week 14 – 2011

This weeks game has the Pats traveling to Washington. Even though Washington’s QB situation is less than ideal, their D is still good. Thankfully our QB situation is much better and with the year he’s having it’s in Gronkowski we trust. Since the weather is nice and it’s a 1pm game we’re going to do up some tasty BBQ and and offer three versions for your dining and game enjoyment.

Beer marinated brisket

Marinade
In a metal bowl place the brisket fat side down. Pour enough Night Falls over the beef to cover all parts. Take 2 teaspoons of whole peppper, crack / crush with a hammer and sprinkle over the meat. Add 2 tablespoons of olive oil and let sit refrigerated overnight.

Cooking
We’re going to slow cook this one. Preheat the oven to 300 degrees. Remove the beef and place in foil fat side up. Strain the marinade using cheesecloth to get the larger pepper pieces out of it. Shake the peppercorns on the meat. Add fresh peppercorns if you don’t want to mess with that last step. Wrap the foil up over the meat so it will simmer in it’s own juices. Before closing add 2 tablespoons of beer marinade. Cook for 5 hours.

Gravy
In a sauce pan pour the filtered marinade. Simmer and add flour slowly while whisking. The result will be a nice sharp gravy

Chicken
Take a full fat, real oil based italian dressing and marinate overnight. Grill when you are ready. Simple effective and tasty.

Shrooms
When grilling the chicken take some portabello mushrooms and put the tops down. Pour a little italian dressing into the cap. Grill for 5 minutes and flip. Watch for flareups when you flip the mushrooms. grill for another 5 minutes.

Pulling it together we’ll serve a side of dirty rice – brown rice, sauteed onions, jalepenos and tomatoes – and a Hooksett ale. Great food, great football, family and friends. It’s another great Sunday indeed. Hope you enjoy.
