Week 10 – BYE

This week finds our guys resting and trying to recover some.  I like this week for a bye as it’s late enough for us to have established some gains as a team and not so early in the process that the week of rest is wasted by a later long run to the playoffs.

It seems interesting to me that as of late the injury bug is ravaging the league this year.   Players get more time away for the first time in the new CBA this offseason and ligament injuries are way up.  Depth at multiple positions is being tested on a ton of teams.  I post this as we’re dealing with injuries too and it wasn’t that long ago that the offseason talk was of more ‘live’ games and or additional teams.  I don’t know about you but it’s bad enough we have teams doing as poor as the Jags.  I don’t want to go to a soccer solution of major and minor leagues based on wins and losses last year.  I also don’t want to see pro teams that are ‘out of their league’ talent wise.

So with today as a bye day I’m going to head out with the family and enjoy my free Sunday.  I will however have loaded nachos for the late game tonight.  Here are my vegetarian loaded nachos:

1 bag of tortilla chips.  I like blue corn chips but any thick chip will do.
1 can of vegetarian refried beans.
1 jar of your favorite salsa.  I like mine medium hot
Shredded cheese.  I picked up a Mexican blend
2 jalapenos chopped and the seeds left in.
Lettuce – shredded
Sour cream

Preheat oven to 350.  In a small pot heat up the refried beans.   In a cookie or baking sheet in alternating layers put chips, beans and cheese.  I build up a mound towards the middle with less beans in the middle to prevent soggy chips.  Smother with salsa on the last layer then cheese and lastly the chopped jalapenos.  The first layers is a process where less per layer is more unless you want to just dig in with a fork and knife.  If the latter is your preference then by all means pile it on.

Bake for 15 minutes or until cheese is nice and melted.  Carefully move off the cookie sheet into a large bowl or platter and enjoy.  Super easy and super tasty.  I’ll be enjoying mine with a Belgian Style Pale ale and watching the late game with a Tavern ale.  Yup, it’s almost Tavern ale time.
