Week 13 – Pats at Houston

Week 13 finds us coming off a wild wind in Foxboro.  A brutal, uncharacteristic first half was followed by a mind blowing hard charging fury of points to win in OT.  Seriously, you can’t make these things up.  Houston, a team many thought primed to go to the big game last year, has fallen apart.  Beaten by the lowly Jags, their QB lost his moxie and the D is suffering from injuries to key players like we are.

What does it all mean?  Well, if any game this year is poised for a let down this one is it. The reality is JJ Swatt is still a force to be recon’d with and Houston is in many ways still the team of last year.  My hope is our young players stay on the message and are consistent with last games second quarter.  That and Ridley gets his fumblitis under control and earns his way out of the doghouse.  We need his production for the season end run.   That and I don’t think my heartburn can handle another Jekyll and Hyde type of game.

So what’s to eat with today’s game?  It’s the Thanksgiving leftover challege.  Or the challenge on Sunday to try and get rid of what’s left of your leftovers and not go insane.  My answer is turkey quesadillas.

Turkey quesadilla

Leftover turkey chopped into small pieces.  Not quite shredded, rather minced.
One package of large flour tortillas
Red Onion – diced
Shredded cheddar cheese
Jalapeno – diced
Sour Cream
Salsa

Preheat the oven to 350 degrees.  In a large cookie sheet put one flour tortilla down.  cover lightly with turkey, onions, jalepeno and then cheese.  Don’t over do the cheese as it’ll just ooze out the side.  Place the cookie sheet in the oven and cook for 8 minutes.  Now the hard part – flip the tortilla.  While it can  be skipped, the tortillas are better if flipped.  I use a large grilling size spatula to flip my tortillas.  If you are not confident on your flipping skills a smaller tortilla shell will help make you more successful too.  Cook another 4 minutes or until the cheese is fully melted.

After cooking serve on a plate and slather with salsa and sour cream!

For drinks I’m having an ESB today.  We made a special one off batch of ESB for the Red River Theaters SNOB Film Festival and I for one think it’s a great overlooked style.  That and I like our take on the style.  Traditional but a bit more bitter than classic for US taste buds.
