Week 16 is here. Last week the playoff ranked teams all seemed to not want to step up and take a lead role. Good for us considering we’re still ranked #2. This week finds us in Raven country. I think Ravens vs Pats is just slightly behind Ravens vs. Steelers in terms of intensity of the game.
Ravens have won a lot lately behind the leg of their kicker. Winning on field goals and strong D have long been been a hallmark of this team. Flacco has made some great throws this year but still seems out of synch with his recievers. We’re banged up on both sides of the ball and every game seems to come down to the wire. I’m rooting for a strong, versatile running game with enough passing to get us a W.
In keeping with the manic rush that is the holidays, I’m going to share a winning beef jerky recipe. Yup, today’s games will revolve around meat and beer. I’m ok with that!
Easy Beef Jerky
1 half inch thick cut of quality steak. I got a NY strip on sale.
1 cup of your favorite BBQ sauce. I chose a hickory smoked sauce.
Cut the steak into 1/4 inch thick slices. You need either a very sharp knife or you can slightly freeze the steak to make it easier. Rub the steak strips with the bbq sauce. I found that dipping it in the sauce and then wiping off the excess worked well. You want a nice thin coating, not globules of sauce.
Layer on the dehydrator and set on meat for 5.5 hours. Simple. Easy. Tasty. It took me 20 minutes to make this all work.
For a beer today I’m going to roll with the Hop Session. The sweet and savory jerky paired with a nice smooth hop profile is a match made in heaven. Just remember, even if dehydrated you’re eating steak. It’s addictive and if you’re not careful you may find yourself eating over a pound (pre-dehydrated weight) of choice jerky.
