Week 8, half way through the season. We have a 9:30 am game in London and about 15 hours of football to watch today. TGIFS indeed. This week at 1pm we host the Bears. Both teams have injuries but of most concern to me is our run D. We can’t seem to stop teams running on us right now. My biggest hope is Careless Cutler performs his mind blowing turnover and sideline pouting routine today. Regardless, I’ll go with team chemistry and root for another ugly Pats win today.
So what’s the food today? It’s a pizza pie. Pizza pie? Yup, you read that right. Pizza Pie. The dough recipe is here. There are a few tricks to making a pizza pie:
1. Roll the dough as thin as you can.
2. Don’t over sauce the middle. A little goes a really long way.
3. Cook almost twice as long as a regular pizza. It’s a pie after all.
This is my pie minus the “cook’s test piece”. Here’s how I made it:
I used a stoneware pie dish. In the first layer of dough I put a sliced tomato, grated cheese, sausage, cheese, green pepper, onion, cheese, chicken and then more cheese. Note, the cheese is a thin layer to help bind the ingredients together. Don’t overdo it. A cup of cheese is plenty. I put the top layer of dough on, then more sliced tomatoes, cheese and a ring of pesto around the edge. Bake for 45 minutes at 350 degrees. Let cool for 15 minutes and enjoy.
