Our Beers

Unless otherwise noted, our beers are intended to be served between 50 and 55 degrees in a tulip or chalice styled glass.  We think this helps show off the beers aromas and flavors best.

Flagship Beers
Our flagship beers are available year round. Enjoy them anytime.

Rotating Beers
We enjoy working on a wide variety of beers. There’s no formal schedule for our Rotating Releases. It just depending on the time of the year and where our creativity takes us. We hope you enjoy each creation while they’re available.

Apprentice Beers
These beers have been designed and brewed by those who have completed our apprentice program.

Barrel Aged Beers
We love how aging a beer in a barrel can influence and change it over time.  Each barrel has a unique flavor and aroma and there’s no hard fast schedule for aging a beer.  As such, we slowly age our beers, sample periodically and release only when we feel the beer is ready. We can’t see any other way to work with barrels and hope you appreciate the results too.

Oak Aged Beers
We sometimes use oak chips or spirals in place of a barrel. Using these barrel substitutes gives us the essence and flavors of oak and the ability to use spirits or wine that may not be matured themselves in a barrel. We take the same approach as barrel aging and give the beer and oak the time needed to infuse the flavors and aromas we enjoy.

One Time Beers
Sometimes the urge to create takes over. When days like this happen we change the schedule and go for it. If we like the results we release it as a one time beer so you too can enjoy the path less taken.

Pilot Projects
These batches are typically brewed on our original 20 gallon system.
