Senex Torva is latin for aged wild.
For the 2013 release we aged our Saison for a year and a half in pinot noir barrels with brettanomyces. We blended 4 barrels together to create an awesome drinking wild brew. Golden with amber hues, a beautiful spicy fruit note and a crisp tart finish. This beer is great by itself, with a plate of sharp aged cheese or rich gravy drizzled foods.
Our first batch in 2010 was aged an extended period of time on oak chips with a special brettanomyces strain. The result was spicy and tart, with mild fruit notes and a crisp dry wild finish.
